  Angela's Country Home-style Recipes ...

I enjoy cooking home-made treats to welcome guests to our farm. Food is a wonderful way to express our delight in sharing our piece of the Aussie bush.

Of course, the welcome is with a sweet treat.

I have collected recipes from friends, work colleagues, magazines, but the most-loved ones are the simple, traditional cakes and slices that my mother used to cook.

My mother grew up in Bathurst, the youngest of nine children. She was a hardworking, straight-talking woman who would share her spin on life, offering many sayings that we often reminisce about.

Her cooking was well known in the area - particularly her fruit cakes, plum puddings and pavlovas. At one stage she supplied a local restaurant with pavlovas - often cooking over a hundred in a week. They were packed in the pantry with prescision, ready for delivery. Many visitors were given a slice or two from the store, for afternoon tea. Poor dad grew to hate pavlova and refused to eat it.

They were the best pavs! You haven't lived life if you haven't eaten home-made pavlova!

Mum would cook cakes and slices whilst she chatted to friends and visitors. By the time they were ready, she would have the "billy" boiled and brewed up a pot of tea. Never tea bags!

Mum traditionally cooked with the "fuel stove", a wood-fired oven, that created the best home-cooked treats. Although in her later years, this was replaced by a fancy gas oven with bells and whistles. Somehow - the taste of the old fuel stove made everything taste better, so we did miss it.

I have the original recipe collection, that my dad typed on his old Olivetti typewriter - (including a few typos). I treasure this collection and wish to share the food and conviviality it represents.

These are tried and tested recipes and are foolproof. Think of Ruth as you eat them.
